Here’s a quick weeknight dinner that will surely become a go-to favorite! Cook penne and broccoli in the same pot, toss the hot pasta with Parmesan, lemon, butter and a bit of pasta water and you’ll have a saucy pasta dish that’s perfect on it’s own for Meatless Monday or can be topped with cooked chicken or cooked shrimp! Add a pinch or two of crushed red pepper flakes for a kick of heat! Penne Parmesan & Broccoli, it doesn’t get much easier…..or more delicious…..than this!
Cook penne according to package directions, adding broccoli during last 3 minutes of cooking time. Drain, reserving 3/4 cup pasta water.
Toss hot pasta and broccoli with Parmesan, butter, lemon juice, lemon zest, kosher salt, cracked black pepper and reserved pasta water.
