How to make easy mint brownies

- Preheat oven to 350F. Line a 13-inch x 9-inch baking pan with foil leaving a 2-inch overhang and coat with no-stick cooking spray.
- Whisk flour, cocoa powder and salt together until blended. Set aside.
- Combine melted butter and sugar and stir until sugar is dissolved then add eggs and vanilla.
- Stir in reserved flour mixture until a brownie batter forms and stir in mini chips and green sprinkles and pour into prepared pan.
- Bake 30 minutes.
- Remove from oven and immediately top with thin mint candy. Spread melted candy over the brownies. Let stand 10 minutes.
- Using foil overhang, lift brownies out of pan and cool completely on wire rack.
- Cut into 15 full size brownies or 30 bite size mint brownie bites.

- It is easiest to get brownies out of the baking pan when you line the pan with aluminum foil and leave a 2-inch overhang to use for lifting the brownies out of the pan.
- Use a shamrock cookie cutter to cut out brownies and make shamrock brownies

- 3/4 tsp. salt
- 1 cup butter , melted
- 1 2/3 cups granulated sugar
- 4 eggs
- 2 tsp. vanilla extract
- 1/2 cup mini chocolate chips
- 1/2 cup green shamrock sprinkles , divided
- 2 pkgs. (28 pieces each) thin mint candy , unwrapped, such as Andes brand
