How to make loaded nacho fries

- Preheat oven to 425F. Coat a large baking sheet with shallow sides with cooking spray.
- Arrange the waffle fries in a single large on the prepared baking sheet and cook for 10 minutes.
- While fries are baking, cook the ground beef and chili seasoning mix in a large skillet over medium-high heat until the beef is browned.
- Stir in the Rotel diced tomatoes and green chilies with their juices.
- Reduce the heat to medium and simmer until the beef mixture is heated through.
- Remove the fries from the oven and top with one cup of the chili mixture and 1 cup shredded cheese.
- Then top with the remaining chili mixture and cheese.
- Return the baking sheet to the oven and cook 5-7 minutes until the cheese is melted.
- Top with scallions and chopped tomato and serve!
