Bacon, mac 'n cheese, potato skins......and barbecue sauce too? Oh yes! Now I'm sure I've got your attention! What better way to watch your favorite team win the Super Bowl than while snacking on this winning appetizer? Best of all, you can assemble ahead, then heat when you're ready to serve!*
Bacon Barbecue Mac 'N Cheese Potato Skins!
6 baking potatoes, about 5 ounces each
2 Tbs. olive oil
1 tsp. kosher salt
1 pkg. (12 oz.) deluxe macaroni & cheese dinner, with cheese pouch
3/4 cup barbecue sauce
4 slices cooked bacon, crumbled
1. Preheat oven to 425F.
2. Rub potato skins with olive oil and sprinkle with kosher salt. Arrange on baking sheet. Bake until tender, about 1 hour. Cool slightly. Halve lengthwise and scoop out potato pulp to within 1/2" of edges. Save scooped out potato for another use....mashed potatoes maybe?
3. Meanwhile, cook macaroni & cheese dinner according to package directions.
4. Reduce oven to 350F.
5. Spoon barbecue sauce inside potato skins. Top with prepared macaroni & cheese and sprinkle with crumbled bacon. Arrange on baking sheet.
*You can prepare them up to this point and then heat when ready to serve!
6. Bake until heated through, 8-10 minutes.
Makes 12 potato skins.

Great idea! I love how portable these are, as you could easily bring these over to a friend's house (especially if they are hosting the Super Bowl)...do you think they might freeze OK too?

I actually haven't tried to freeze them myself but I can't think of any reason why you couldn't. If you give it a try let me know how they turn out! Enjoy!
