Cheesy Chili Nacho Fries

Crispy waffle fries are topped with homemade ground beef chili, cheddar cheese, scallions and chopped tomatoes. Chili Nacho Fries are a hearty appetizer recipe that everyone will love!

Ingredients

  • 1 package (22 ounces) frozen waffle fries
  • 1 pound lean ground beef
  • 1 envelope (1.25 ounces) chili seasoning mix
  • 1 can (10 ounces) RoTel original diced tomatoes and green chilies
  • 2 cups shredded cheddar cheese divided
  • 2 scallions chopped, 1/2 cup
  • 2 plum tomatoes chopped, 1 cup

Instructions

  • Preheat oven to 425F. Coat a large baking sheet with shallow sides with cooking spray.
  • Arrange the waffle fries in a single large on the prepared baking sheet and cook for 10 minutes.
  • While the fries are baking, cook the ground beef and chili seasoning mix in a large non-stick skillet over medium-high heat until the beef is browned.
  • Stir in the Rotel diced tomatoes and green chilies with their juices.
  • Reduce the heat to medium and simmer until the mixture is heated through.
  • Remove the fries from the oven and top with one cup of the chili mixture and 1 cup shredded cheese.
  • Then top with the remaining chili mixture and cheese.
  • Return the baking sheet to the oven and cook 5-7 minutes until the cheese is melted.
  • Top with scallions and chopped tomato and serve!

Notes

This recipes makes 8 appetizer servings or 4 main dish servings
