Blueberry Biscuits
You can also make these homemade biscuits with frozen blueberries, but, in my opinion, there’s nothing quite like fresh juicy blueberries.
Add in lemon zest and butter and every bite of these sweet blueberry biscuits is a taste of heaven.
These biscuits are so delicious that I made the lemon glaze optional. Totally up to you if you want to drizzle the glaze or not.
Of course, I’ll take all the lemony goodness and sweetness of this biscuit icing every chance I get!
Oh, and best of all, there's no need to roll out the biscuit dough or use a biscuit cutter. These are drop biscuits and you can use a large spoon or an ice cream scooper to shape and drop the biscuits on a cookie sheet.
You can serve these biscuits at room temperature or serve warm biscuits, the choice is yours.

How to make homemade blueberry biscuits

- Preheat oven to 400F. Line a large baking sheet with low sides with parchment paper.
- In a large mixing bowl combine flour, 4 Tablespoons granulated sugar, baking powder and kosher salt.
- In a medium bowl combine egg, grated butter, sour cream, 4 Tablespoons milk and lemon zest.
- Add wet ingredients into the dry flour mixture and stir until just combined.
- Fold in the blueberries.
- Using a scooper or large spoon, drop biscuit dough onto the prepared baking sheet, making 12 biscuits.
- Brush tops of biscuits with the remaining 1 Tablespoon milk and sprinkle the top of the dough with the remaining 1 Tablespoon granulated sugar.
- Bake until golden brown, about 25 minutes.
- If you want to drizzle your biscuits with a sweet lemon glaze, in a small bowl combine confectioners sugar and lemon juice, stirring until smooth. Drizzle glaze over biscuits.
- Serve the biscuits warm or at room temperature.

- For best results, the butter must be very cold or even frozen before grating
- Grate the butter using the largest holes on your grater
- For even baking, place the baking pan on the middle oven rack
- Serve your biscuits with honey butter!
Substitutions
- You can substitute frozen blueberries for the fresh blueberries
- Substitute lime zest and lime juice for the lemon zest and lemon juice
- Feel free to use plain full fat Greek yogurt in place of the sour cream
- Prefer a vanilla glaze? Substiute milk or water for the lemon juice
- Don't have any parchment paper? No worries, just spray your pan with nonstick cooking spray
Storage
- Store blueberry biscuits in an airtight container at room temperature.
