The weekend is here! Perfect timing for making Flourless Chocolate Oat Pancakes for brunch or as a special treat for the kids on a relaxing weekend morning! There's a craze on the internet for 2 ingredient pancakes made with bananas and eggs that I've taken to the next level by adding oats to bulk them up and cocoa powder for a chocolate treat! Silver dollar size pancakes are the perfect size for the kid in everyone! Serve with fresh fruit, butter and maple syrup for a heavenly morning breakfast!
Flourless Chocolate Oat Pancakes
1/2 cup mashed ripe banana
1/4 cup rolled oats, preferably gluten free
2 large eggs
2 Tbs. unsweetened cocoa powder
1 Tbs. granulated sugar
Maple syrup, butter, fresh fruit, optional serving suggestions
1. Combine banana, eggs, oats, cocoa powder and sugar until blended. Let stand 5 minutes to thicken.
2. Spray a large non-stick skillet with non-stick cooking spray and heat skillet over medium heat.
3. Spoon mixture, 2 Tablespoons at a time, onto skillet and cook 1 minute until browned. Turn and cook additional 1 minute or until cooked through.
4. Serve with maple syrup, butter or fresh fruit.
Makes 10 small silver dollar size pancakes (about 3-inch diameter).
TIP: Batter can be made ahead and refrigerated overnight.
