Skillet Chicken Fajitas
All it takes is a few ingredients, one cast iron skillet, or nonstick skillet, and in less than 30 minutes you’ll have easy and delicious Skillet Chicken Fajitas on the table for dinner tonight.
Busy weeknights can be stressful but this recipe will take the stress out of getting dinner ready quickly.
And there's no need to head out to a restaurant when you can make fajitas on the stove at home that taste just as delicious.
A homemade fajita seasoning flavors chicken, peppers and onion for an easy weeknight dinner.
I used my cast iron skillet to make these fajitas but you can you can make this recipe in a large nonstick skillet if you don’t have a cast iron skillet.
The three colors of bell peppers make the fajitas look pretty but you can use just one color of bell peppers and the flavor will still be delicious.
I would stay away from green bell peppers though because they aren't as sweet as red, orange and yellow bell peppers.
The poblano pepper adds a bit of heat to this recipe, although the poblano is known to be a mild chili pepper.
If you prefer more heat you can also add a fresh jalapeno too! Include the seeds of the jalapeno for even more heat.
Wrap up a delicious filling in warm tortillas, top it with guacamole and cilantro and a squeeze of lime and chicken fajitas tacos will be your favorite dinner for sure!

- Be sure to thinly slice the peppers and onion so they are all the same thickness. This ensures that they will cook evenly together.

Substitutions
- You can substitute beef for the chicken. Flank steak or sirloin steak will both work well in this recipe.

How to make chicken fajitas

- In a small bowl, combine chili powder, paprika, cumin, garlic powder and kosher salt.
- Season the chicken with 4 teaspoons of the spice mixture.
- Heat oil in a cast iron over medium heat.
- Cook the chicken until cooked through and the internal temp reaches 165 degrees, turning once, about 8-10 minutes. Remove the chicken from the skillet.
- Meanwhile, toss peppers and onion with the remaining spice mixture and add the vegetables to the same skillet.
- Cook the peppers and onion until they are tender, 7-8 minutes, stirring occasionally.
- While the vegetables cook, slice the chicken into thin strips.
- Add the sliced chicken into the skillet and mix thoroughly. Remove from heat.
- Fill the warm tortillas with the chicken fajita filling. Serve with guacamole, cilantro and lime wedges.
