- Line a large baking sheet with low sides with parchment paper.
- In a large mixing bowl toss the potatoes, onion soup mix, melted butter and olive oil until the potatoes are evenly coated.
- Arrange the potatoes in a single layer on the prepared baking sheet and roast for 25 minutes, stirring halfway through the cooking time.
