- Heat the oil in a medium saucepot over medium heat.
- Saute onion, chili powder, garlic powder, cumin and kosher salt until the onion is tender-crisp, stirring occasionally, about 5 minutes.
- Stir in broth, hominy, Rotel tomatoes and tomato paste and bring to a boil over medium-high heat.
- Reduce to medium heat and simmer for 25 minutes, stirring occasionally.
- Transfer soup to serving bowls and top with cilantro, radishes, avocado, scallions and lime wedges.

- You can use yellow hominy or white hominy in this recipe
- Add a splash of hot sauce before serving for a hint of heat
- Add 1/2 teaspoon dried mexican oregano
