Ingredients
- 1 pound ground beef , preferably 85% lean
- 1/4 cup chopped onion
- 1 can (14.5 ounces) diced tomatoes with roasted garlic and onion
- 1/4 cup + 2 Tablespoons ketchup , divided
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 6 slices sharp cheddar cheese
- 8 dill pickle slices , optional
- 4 cups frozen tater tots , about 44 pieces

Instructions
- Preheat oven to 400F.
- Cook ground beef and onion in non-stick skillet over medium-high heat until beef is browned; drain any fat.
- Stir in tomatoes, 1/4 cup ketchup, kosher salt and pepper. Bring to a boil. Reduce heat to medium and simmer until mixture is thick and saucy, about 5-7 minutes.
