Ingredients
- 1 lb. boneless skinless chicken thighs
- 1/2 tsp. dried basil ,divided
- 1/2 tsp. kosher salt ,divided
- 1/4 tsp. pepper ,divided
- 1 Tbs. olive oil
- 1 onion ,chopped, 1 cup
- 1/4 cup sundried tomatoes ,chopped
- 1 clove garlic ,minced
- 1/4 cup balsamic vinegar
- 1 can (14.5 ounces) diced tomatoes with basil and oregano
- 2 Tbs. thinly sliced fresh basil leaves ,optional

Instructions
- Season chicken with 1/4 tsp. basil, 1/4 tsp. kosher salt and 1/8 tsp. pepper.
- Heat oil in large non-stick skillet and cook chicken until browned on all sides; reserve.
- In same skillet cook onion, sundried tomatoes and garlic until just tender, stirring occasionally, 2-3 minutes.
- Add balsamic vinegar and cook 1 minutes.
- Stir in diced tomatoes with their juices and reserved chicken and bring to a boil.
- Reduce heat and simmer until chicken is cooked through, about 15 minutes.
- Garnish with sliced fresh basil, if desired
