- 1 lb. boneless skinless chicken thighs
- 1/2 tsp. dried basil, divided
- 1/2 tsp. kosher salt, divided
- 1/4 tsp. pepper, divided
- 1 Tbs. olive oil
- 1 onion, chopped, 1 cup
- 1/4 cup sundried tomatoes, chopped
- 1 clove garlic, minced
- 1/4 cup balsamic vinegar
- 1 can (14.5 ounces) diced tomatoes with basil and oregano
- 2 Tbs. thinly sliced fresh basil leaves, optional
Season chicken with 1/4 tsp. basil, 1/4 tsp. kosher salt and 1/8 tsp. pepper.
Heat oil in large non-stick skillet and cook chicken until browned on all sides; reserve.
In same skillet cook onion, sundried tomatoes and garlic until just tender, stirring occasionally, 2-3 minutes.
Add balsamic vinegar and cook 1 minutes.
Stir in diced tomatoes with their juices and reserved chicken and bring to a boil.
Reduce heat and simmer until chicken is cooked through, about 15 minutes.
Garnish with sliced fresh basil, if desired
