How to make jalapeno lime chicken recipe

- Preheat oven to 425F.
- In bowl combine olive oil, ginger, jalapeno, lime zest, garlic and kosher salt.
- Toss potatoes, green beans and chopped onion with 2 Tablespoons olive oil mixture.
- Arrange vegetables on a large baking sheet leaving room in center for chicken breasts.
- Toss chicken breasts with remaining olive oil mixture and arrange in center of baking sheet.
- Roast 25 minutes or until chicken is cooked through and vegetables are tender.
- Sprinkle with cilantro.

- Don’t crowd the food on a small baking sheet. Be sure to use a large pan with low sides so the food can spread out and not crowd together to ensure proper cooking.
Substitutions
- You can substitute boneless skinless chicken thighs for the boneless skinless chicken breasts
- Baby red potatoes can be used in place of the tri-colored potatoes
- Broccoli florets can be used instead of the green beans
- Sugar snap peas would be a good substitution for the green beans too
