  • In a mixing bowl, toss the chicken and cornstarch together until the chicken is evenly coated.
  • Heat the olive oil in a large non-stick skillet over medium heat.
  • Add the chicken pieces and cook until lightly browned, stirring occasionally.
  • Add the teriyaki sauce, stirring to coat the chicken.
  • Reduce the heat to low and simmer until the chicken is cooked through and slightly caramelized. Remove from the heat.
  • In a small bowl, whisk together mayonnaise, honey, soy sauce, lime juice, and garlic powder until smooth and blended.
  • To assemble the bowls, divide the rice evenly between four bowls, topping with the teriyaki chicken and pineapple salsa.
  • Serve the sauce on the side or drizzle over each bowl.
