Ingredients
  • 6 Tbs. butter
  • 2 apples, cored and chopped, 2 cups
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 Tbs. chopped fresh sage leaves OR 1 tsp. dried sage
  • 6 cups cubes stuffing mix
  • 1 1/2 cups chicken broth
  • 3 eggs , lightly beaten
Instructions
  1. Preheat oven to 350F. Spray a //z-na.amazon-adsystem.com/widgets/onejs?MarketPlace=US" rel="nofollow">12-cup muffin tin with non-stick cooking spray.

  2. In large non-stick skillet melt butter over medium-high heat.
  3. Cook apples, onion, celery and sage until just tender, about 7 minutes, stirring occasionally.
  4. Remove from heat and stir in stuffing mix and broth, stirring until mixture is completely moistened. Let cool slightly then stir in beaten eggs.

  5. Press mixture into prepared muffin tins, mounding up on top and dividing evenly.
  6. Bake 25 minutes or until set.
  7. Let stand on wire rack minutes. Loosen stuffin’ muffins around edges with a sharp paring knife and remove. Serve warm or at room temperature.
