- 2 Tablespoons red wine vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon kosher salt

- 12 ounces assorted small size heirloom tomatoes, quartered, 2 cups, OR 1 pkg. (12 oz.) Gourmet Medley tomatoes**
- 1 (12 ounces) cucumber, peeled in stripes, sliced 1/2-inch thick then quartered, 2 cups
- 1/4 cup thinly sliced red onion
- 1 Tablespoon chopped parsley
