Preheat oven to 300F.
Remove kale leaves from stems and middle vein. Cut or tear the kale leaves into bite size pieces. Wash the leaves to remove any grit or dirt and pat dry.
In a bowl combine kale leaves and olive oil. Using hands, massage each leaf so that entire surface of both sides of leaves are moistened with oil.
In two batches, arrange kale leaves on ungreased baking sheets in single layer. Be sure not to crowd the leaves on the pans or they will not bake up crispy!
Sprinkle with garlic powder, kosher salt and pepper.
Bake 20 minutes or until the leaves are crispy.
