Flourless Chocolate Oat Pancakes

Ingredients

  • 1/2 cup mashed ripe banana
  • 1/4 cup rolled oats preferably gluten free
  • 2 large eggs
  • 2 Tablespoons unsweetened cocoa powder
  • 1 Tablespoons granulated sugar
  • Maple syrup, butter, fresh fruit , optional serving suggestions

Instructions

  • Combine banana, eggs, oats, cocoa powder and sugar until blended. Let stand 5 minutes to thicken.
  • Spray a large non-stick skillet with non-stick cooking spray and heat skillet over medium heat.
  • Spoon mixture, 2 Tablespoons at a time, onto skillet and cook 1 minute until browned. Turn and cook additional 1 minute or until cooked through.
  • Serve with maple syrup, butter or fresh fruit.

Notes

Makes 10 small silver dollar size pancakes (about 3-inch diameter).
