Instructions
Combine banana, eggs, oats, cocoa powder and sugar until blended. Let stand 5 minutes to thicken.
Spray a large non-stick skillet with non-stick cooking spray and heat skillet over medium heat.
Spoon mixture, 2 Tablespoons at a time, onto skillet and cook 1 minute until browned. Turn and cook additional 1 minute or until cooked through.
Serve with maple syrup, butter or fresh fruit.
Notes
Makes 10 small silver dollar size pancakes (about 3-inch diameter).
