  • Heat the olive oil in a skillet over medium heat.
  • Add the sliced onions and cook until the onions have become golden brown and caramelized, stirring occasionally, about 20 minutes.
  • Add the sherry and cook for 1 minute.
  • Stir in the flour, thyme, garlic powder and pepper, stirring until the onions are coated and any liquid is absorbed.
  • Transfer the onions to a large pot and add the beef broth, Worcestershire sauce and onion soup mix and bring to a boil.
  • Reduce heat to medium high and simmer for 20 minutes, stirring occasionally. The soup will thicken slightly.
  • Season with salt, if desired.
  • Transfer soup to servings bowls and top with croutons and mozzarella cheese. You can microwave the bowls of soup if you want the cheese to melt more.
