  • In a small bowl, toss the avocado with the lemon juice. This will help to keep the avocado from browning.
  • In a mixing bowl, combine the Greek yogurt, Dijon, kosher salt, pepper, garlic powder and 1/4 teaspoon smoked paprika, stirring until blended.
  • Add the avocado and chopped eggs, gently tossing until evenly coated.
  • Top each slice of bread with the avocado egg salad, dividing evenly between the bread, about a scant ½ cup on each slice.
  • Sprinkle with the remaining 1/4 teaspoon smoked paprika and enjoy!

Notes

This recipe makes about 1 2/3 cups of avocado egg salad.
