Blueberry Biscuits

A tender biscuit is bursting with fresh blueberries and flavored with a hint of lemon. Homemade Blueberry Biscuits are easy to make and delicious for breakfast, brunch and even dessert.

Instructions

  • Preheat oven to 400F. Line a large baking sheet with low sides with parchment paper.
  • In a large mixing bowl combine flour, 4 Tablespoons granulated sugar, baking powder and kosher salt.
  • In another bowl combine egg, grated butter, sour cream, 4 Tablespoons milk and lemon zest.
  • Add wet ingredients into the dry ingredients and stir until just combined.
  • Fold in blueberries.
  • Using a scooper or large spoon, drop biscuit dough onto the prepared baking sheet, making 12 biscuits.
  • Brush the tops of the biscuits with the remaining 1 Tablespoon milk and sprinkle with the remaining 1 Tablespoon granulated sugar.
  • Bake until golden, about 25 minutes.
  • Serve warm or at room temperature.

Optional Glaze:

  • If you want to drizzle your biscuits with a lemon glaze, in a small bowl combine confectioners sugar and lemon juice, stirring until smooth. Drizzle glaze over biscuits.
