Olympic Torch Ice Cream Cone Cupcakes

Kick off the Olympics with our Olympic Torch Ice Cream Cone Cupcakes, an edible Olympic torch! Brownie batter bakes up inside ice cream cones and is topped with frosting “flames”. So much fun and so delicious!

  • Preheat oven to 350F. Arrange cones in muffin tins.
  • In bowl combine brownie mix, oil, eggs and water according to package directions. Amounts of oil, eggs and water may differ from above based on the brand of brownie mix you use.
  • For easy pouring, transfer brownie batter to glass measuring cup and divide batter evenly between cones, about 3 Tbs. batter per cone. Do not overfill or batter will overflow when baking!
  • Bake 25-30 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes in pans. Transfer to wire rack and cool completely.
  • With mixer on medium-high beat butter until fluffy. Gradually add confectioners' sugar and milk and beat until light and fluffy. Stir in yellow gel color to desired color for "flames" and frost tops of brownies with a thin layer of frosting.
  • Attach open star decorating tip to pastry bag. Using paint brushes, brush a line of each gel color inside pastry bag and then transfer remaining yellow frosting into pastry bag.
  • Pipe "flames" on top of cones, pulling up each time you pipe frosting.
  • Sprinkle with yellow, orange and red cake sparkles.
  • Decorate with ribbon, if desired, attaching with a dab of frosting. Remove ribbon before eating!

Notes

Swirls of Flavor Recipe Tips
  • Be sure the cones are standing up straight and level in the cupcake pan
  • Stir mini chocolate chips into the brownie batter before baking
  • Sprinkle chocolate chips on top of the brownie batter before baking
  • Fill mini cones with the brownie batter for a bite size treat
Substitutions
  • Substitute canned vanilla frosting for the homemade frosting
  • Substitute canned white frosting for the homemade frosting
Variations

  • Frost the tops of the brownies with the frosting and dip in red, white and blue sprinkles
