Ingredients

  • 2 Tablespoons toasted sesame oil
  • 2 Tablespoons minced fresh ginger
  • 2 Tablespoons minced jalapeno
  • 1 Tablespoon minced garlic
  • 1 Tablespoon soy sauce
  • 1/4 teaspoon kosher salt
  • 1 pound ground chicken
  • 2/3 cup shredded carrots
  • 1/2 cup sliced scallions
  • 1/4 cup chopped fresh mint
  • 2 Tablespoons chopped Thai basil leaves
  • 8 lettuce leaves
  • 2 Tablespoons lime juice
  • Lime wedges

Instructions

  • Heat sesame oil in large non-stick skillet over medium heat. Add ginger, jalapeno, garlic, soy sauce and kosher salt and cook until fragrant, about 1 minute.
  • Add ground chicken and cook 5 minutes, stirring occasionally. Stir in carrots and scallions and cook until chicken is no longer pink and cooked through, about 2 minutes.
  • Remove from heat and stir in mint and basil. Divide chicken between lettuce leaves. Drizzle with lime juice.
  • Garnish with additional shredded carrots and scallions, if desired, and serve with lime wedges.
