Preheat your oven to 350F.
In a large skillet cook the ground beef, taco seasoning and tomato paste over medium-high heat until the beef is browned, stirring occasionally. Remove from the heat and let the beef moxture cool slightly.
Meanwhile, brush the bottom of a 7 x 11 inch baking pan or small sheet pan with 1 Tablespoon oil.
Arrange 4 tortillas in the prepared pan overlapping and with an overhang over all four sides of the pan.
Sprinkle half (3/4 cup) of the cheese in the center of the tortillas.
Top with the cooled ground beef mixture and the remaining half (3/4 cup) of the cheese.
Place the remaining two tortillas over the beef and cheese and fold the overhanging tortillas up and in.
Brush with the remaining 1 Tablespoon oil, top with another baking pan and a heavy pot.
Bake tacos for 30 minutes. Remove the heavy pot and baking pan and bake for another 15 minutes or until lightly browned.
Garnish with jalapenos, scallions, sour cream, salsa and cilantro.
