Sauteed Pork Chops with Cherry Balsamic Reduction

- 1 Tablepoon olive oil
- 4 bone-in center cut pork loin chops about 1 3/4 pounds
- 1/2 teaspoon dried thyme divided
- 1/2 teaspoon kosher salt divided
- 1/4 teaspoon pepper
- 2 Tablespoons butter divided
- 2 large shallots finely chopped, about 1/2 cup
- 1/2 cup dried tart red cherries , about 2 ounces
- 1/2 cup chicken broth
- 3 Tablespoons balsamic vinegar

Heat the olive oil in a large skillet over medium-high heat.
Sprinkle chops with 1/4 tsp. thyme, 1/4 tsp. salt and pepper. Cook chops 5-6 minutes per side until browned and, cooked through. You can check if the pork chops are done when a meat thermometer registers 145F. Transfer the chops to a serving dish; keep warm.
In the same skillet melt 1 Tbs. butter. Add shallots, cherries and remaining 1/4 tsp. thyme and 1/4 tsp. salt and cook for 3 minutes or until shallots are just tender, stirring occasionally.
Add broth and balsamic vinegar. Boil until mixture reduces slightly, about 4-5 minutes.
Add remaining 1 Tbs. butter, stirring until butter is melted and sauce forms. Top the pork chops with the sauce and serve..
Serves 4.
This recipe is also delicious when made with boneless skinless chicken breasts! Cook chicken until a meat thermometer registers 165F.
