Ingredients

Instructions

  • Heat oil in a medium saucepot.
  • Add onion, carrots, celery, Italian seasoning, kosher salt and pepper and cook until vegetables are tender crisp, about 7 minutes.
  • In a bowl combine evaporated milk and flour, stirring until smooth.
  • Stir the evaporated milk mixture and chicken broth into the pot and bring to a boil. Boil for 1 minute or until soup begins to thicken.
  • Reduce heat to low and stir in chicken.
  • Simmer until heated through and vegetables are tender, about 10 minutes.
  • Stir in parsley.

Substitutions
  • Substitute dried basil for the dried Italian seasoning
  • Substitute cooked chicken for the rotisserie chicken
  • Substitute ½ teaspoon salt for the 1 teaspoon kosher salt
  • For a richer soup you can use half and half in place of the evaporated milk
