- 4 tomatoes chopped, about 2 cups
- 1 yellow onion chopped, about ½ cup
- 2 medium jalapenos seeded and chopped
- 1/2 cup chopped cilantro
- 2 Tablespoons lime juice
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper

In a medium mixing bowl, combine tomatoes, onion, jalapeno, cilantro, lime juice, kosher salt and pepper, stirring until combined.
Serve with chips, on tacos or burgers.
Store in an airtight container, such as a mason jar, in the refrigerator for up to 3 days.
