- 2 cups granulated sugar
- 2 cups water
- 1 pound strawberries trimmed and halved
- 1 cup fresh lemon juice about 6 large lemons
- 4 cups cold water
Get Recipe Ingredients
Combine 2 cups water and sugar in a saucepot and heat over medium heat until the sugar has dissolved.
Remove the simple syrup mixture from the heat and let it cool to room temperature. You can put it into the refrigerator to speed up the cooling process.
While the simple syrup is cooling, puree the strawberries and 1 cup cold water in a blender until the berries are fully pureed.
Stain the strawberry mixture through a fine mesh strainer to remove any seeds; discard the seeds.
In a pitcher, combine the lemon juice, pureed strawberries, remaining 3 cups cold water and the simple syrup.
Stir and chill until ready to serve.
Serve over ice and garnish with additional fresh strawberries and fresh mint, if desired.
