Easy Bruschetta Pasta Recipe

Juicy tomatoes, fresh basil, red onion, garlic, balsamic vinegar and olive oil combine to make a flavorful bruschetta to toss with warm pasta. Chop up the bruschetta topping as the pasta cooks and you will have this easy pasta recipe on the table in just minutes.

Ingredients

  • 8 ounces medium shell pasta
  • 2 large tomatoes on the vine cored and chopped, 2 cups
  • ½ cup chopped fresh basil
  • 1/3 cup finely chopped red onion
  • 1 Tablespoon minced garlic
  • 3 Tablespoons extra virgin olive oil
  • 2 Tablespoons white balsamic vinegar
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/2 cup shredded Parmesan cheese optional

Instructions

  • Cook the pasta according to package directions for al dente pasta; drain.
  • While the pasta is cooking, in a large bowl combine the tomatoes, basil, red onion, garlic, olive oil, white balsamic vinegar, kosher salt and pepper.
  • Add the hot cooked pasta and toss until combined.
  • Sprinkle with Parmesan cheese, if desired.

This recipe makes 4 main dish servings (1 1/2 cups per serving) or 12 side dish servings (1/2 cup per serving)
