Cucumber Carrot Salad

Ingredients

  • 3 Tablespoons lime juice
  • 1 Tablespoon toasted sesame oil
  • 1 Tablespoon minced fresh ginger
  • 1 Tablespoon soy sauce
  • 1 Tablespoon honey
  • 1 pound mini cucumbers thinly sliced, 4 cups sliced
  • 1 cup shredded carrots
  • 1/4 cup minced red onion

Instructions

  • Combine cucumbers, carrots and red onion in a mixing bowl.
  • In a measuring cup combine toasted sesame oil, lime juice, ginger, soy sauce, honey, kosher salt and pepper, whisking until blended.
  • Combine the dressing with the cucumbers, carrots and red onion, tossing until evenly coated.

Notes

This recipe makes about 5 cups of cucumber salad.
