Instructions
Combine cucumbers, carrots and red onion in a mixing bowl.
In a measuring cup combine toasted sesame oil, lime juice, ginger, soy sauce, honey, kosher salt and pepper, whisking until blended.
Combine the dressing with the cucumbers, carrots and red onion, tossing until evenly coated.
Notes
This recipe makes about 5 cups of cucumber salad.
