Boursin Whipped Potatoes Recipe

Ingredients

  • 3 pounds Yukon Gold potatoes peeled and cut into small pieces
  • 1 cup heavy cream
  • 8 Tablespoons butter 1 stick
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 package (5.3 ounces ) Garlic & Fine Herbs Boursin cheese

Instructions

  • Place the potatoes in a pot with enough cold water to cover them.
  • Bring to a boil over medium-high heat and cook for 20 minutes or until the potatoes are tender; drain potatoes and return the potatoes to the pot.
  • Meanwhile, in a small saucepot, combine the heavy cream, butter, garlic, kosher salt and pepper. Simmer over low heat until the butter is melted and the mixture is heated through. Do not let the mixture come to a boil
  • With a mixer or immersion blender, mash the potatoes. Gradually add the warm cream mixture and beat until blended.
  • Add the Boursin and beat until the potatoes have a whipped consistency.
  • Transfer to a serving dish and enjoy!

Expert recipe tips
  • Halve the recipe - You can easily halve the recipe when serving a smaller group
  • Don’t overmix - Overmixing potatoes can make them gluey. Stop as soon as they’re smooth, whipped and well combined.
  • Room temperature ingredients - Let the Boursin cheese soften to room temperature before mixing. This ensures tat it blends nicely and easily into the hot potatoes.
  • Salt the cooking water - Adding salt to the boiling water helps season the potatoes from the inside out.
  • Starchy potatoes - Starchy potatoes like Russets or yellow potatoes, such as Yukon golds, make the best mashed potatoes
  • Garlic lovers – Add more garlic if you are a garlic lover!
  • Caramelized onions - Stir in minced caramelized onions for even more flavor!
