- 1 can (15 ounces) black beans , drained and rinsed
- 1 can (14 ounces) whole kernel corn , drained
- 2 roma tomatoes , diced about 1 cup
- 1/2 cup diced red onion
- 1 teaspoon minced garlic
- 3 Tablespoons olive oil
- 3 Tablespoons fresh lime juice
- 1/3 cup chopped fresh cilantro
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
Get Recipe Ingredients
In a large mixing bowl, combine the black beans, corn, diced roma tomatoes, red onion, and garlic.
Stir in the olive oil, lime juice, cilantro, kosher salt and pepper and toss until evenly coated.
Let the salsa stand at room temperature or in the refrigerator or 30 minutes so that the flavors can combine.
Toss before serving with chips or as a topping.
