Ingredients

  • 1 can (15 ounces) black beans , drained and rinsed
  • 1 can (14 ounces) whole kernel corn , drained
  • 2 roma tomatoes , diced about 1 cup
  • 1/2 cup diced red onion
  • 1 teaspoon minced garlic
  • 3 Tablespoons olive oil
  • 3 Tablespoons fresh lime juice
  • 1/3 cup chopped fresh cilantro
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  • In a large mixing bowl, combine the black beans, corn, diced roma tomatoes, red onion, and garlic.
  • Stir in the olive oil, lime juice, cilantro, kosher salt and pepper and toss until evenly coated.
  • Let the salsa stand at room temperature or in the refrigerator or 30 minutes so that the flavors can combine.
  • Toss before serving with chips or as a topping.

Notes

This recipe makes 4 cups of salsa/8 servings.
1/2 cup of salsa is one serving
