Beef Stew With Guinness Recipe

Ingredients

  • 2 pounds boneless beef chuck ,cut in 1-inch pieces
  • 1/3 cup flour
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon dried thyme
  • ½ teaspoon pepper
  • 3 Tablespoons oil ,divided
  • 2 onions ,chopped, 2 cups
  • 1 pound carrots ,peeled and cut in 1-inch pieces, about 3 cups
  • 1 pound small golden potatoes ,halved, about 3 cups
  • 2 large cloves garlic ,minced
  • 1 bottle (12 ounces) Guinness stout beer or beef broth
  • ¼ cup tomato paste
  • 2 cups beef broth
  • ¼ cup chopped parsley

Instructions

  • Combine flour, kosher salt, thyme and pepper in a bowl. Add beef and toss until evenly coated.
  • In large pot heat 2 Tablespoons oil over medium-high heat. Cook beef, in batches, until browned; set aside.
  • To same pot add remaining 1 Tablespoon oil, onions, carrots, potatoes and garlic and cook until just tender-crisp, about 6 minutes, stirring occasionally.
  • Add beer and tomato paste and bring to a boil, scraping up the brown bits from bottom of pot.
  • Return beef to pot and stir in beef broth.
  • Bring to a boil. Reduce heat to medium-low and simmer, covered, until beef is very tender, about 2 hours, stirring occasionally.
  • Sprinkle with parsley and serve.

Notes

Makes about 10 cups/ 8 servings.
