  • Slice the rolls in half lengthwise and toast until golden.
  • Meanwhile, mash the avocados.
  • Top each roll half with mashed avocado.
  • In a bowl combine the tomatoes and baby arugula.
  • Whisk together the olive oil, lemon juice, lemon zest, kosher salt and cracked black pepper and toss the vinaigrette with the tomatoes and arugula until evenly coated.
  • Arrange the tomato mixture on top of the mashed avocado, dividing evenly between the toasts.
