Ingredients

Garnishes

  • Cilantro leaves
  • Sliced radishes
  • Chopped avocado
  • Sliced scallions
  • Lime wedges

Instructions

Soup

  • Heat the oil in a medium saucepot over medium-high heat.
  • Cook onion, chili powder, garlic powder, cumin and kosher salt until the onion is tender-crisp, stirring occasionally, about 5 minutes.
  • Stir in broth, hominy, Rotel tomatoes and tomato paste and bring to a boil.
  • Reduce to medium heat and simmer for 25 minutes, stirring occasionally.

Garnishes

  • Transfer soup to serving bowls and top with cilantro, radishes, avocado, scallions and lime wedges.
