Skillet Beef and Rice Dinner

Skillet Beef and Rice is an easy recipe that will be on the table in about 30 minutes. Ground beef, vegetables, rice and seasonings cook together in one pot for a simple dinner recipe. Top with cheese and serve with a tossed salad and you’re all set!

  • In a large skillet, cook the ground beef, onion, bell pepper, garlic, chili powder and kosher salt over medium heat until the beef is browned and the vegetables are tender-crisp, stirring occasionally, about 7 minutes.
  • Add the beef broth, rice, Rotel tomatoes and its juices, and Worcestershire Sauce to the ground beef mixture and stir until well combined.
  • Bring to a boil over medium-high heat. Reduce heat and simmer, covered, until the rice is tender, about 20 minutes.
  • Remove the skillet from the heat and sprinkle with the cheese.
  • Cover the skillet and let stand until the cheese melts, about 3 minutes.
  • Sprinkle with chopped parsley.
