- 4 boneless skinless chicken breasts , about 1 1/4 pounds
- 1 teaspoon dried Italian seasoning
- 1/2 pound (8 ounces) plum tomatoes chopped, about 1 1/2 cups
- ½ cup chopped red onion
- 2 cloves garlic minced
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- 1 Tablespoon olive oil
- 1 Tablespoon balsamic vinegar
- 1 cup shredded mozzarella cheese
- 2 Tablespoons sliced fresh basil
Preheat oven to 375F. Coat a 2 quart baking dish with non-stick cooking spray.
Season the chicken with Italian seasoning and arrange the chicken in the prepared baking dish.
In a bowl combine tomatoes, onion, garlic, kosher salt and pepper. Add the olive oil and balsamic vinegar and toss until evenly coated.
Spoon the bruschetta mixture over the chicken and bake 25 minutes.
Top with shredded cheese. Return to the oven and bake until the chicken is cooked through and the cheese is melted, 5-10 minutes. Meat thermometer should read 165F.
Sprinkle with sliced basil. Serve with hot cooked pasta, if desired.
