Baked Bruschetta Chicken

Ingredients

  • 4 boneless skinless chicken breasts , about 1 1/4 pounds
  • 1 teaspoon dried Italian seasoning
  • 1/2 pound (8 ounces) plum tomatoes chopped, about 1 1/2 cups
  • ½ cup chopped red onion
  • 2 cloves garlic minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 Tablespoon olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • 2 Tablespoons sliced fresh basil

Instructions

  • Preheat oven to 375F. Coat a 2 quart baking dish with non-stick cooking spray.
  • Season the chicken with Italian seasoning and arrange the chicken in the prepared baking dish.
  • In a bowl combine tomatoes, onion, garlic, kosher salt and pepper. Add the olive oil and balsamic vinegar and toss until evenly coated.
  • Spoon the bruschetta mixture over the chicken and bake 25 minutes.
  • Top with shredded cheese. Return to the oven and bake until the chicken is cooked through and the cheese is melted, 5-10 minutes. Meat thermometer should read 165F.
  • Sprinkle with sliced basil. Serve with hot cooked pasta, if desired.
