Ingredients

  • 2 cups granulated sugar
  • 2 cups water
  • 1 pound strawberries trimmed and halved
  • 1 cup fresh lemon juice about 6 large lemons
  • 4 cups cold water

Instructions

  • Combine 2 cups water and sugar in a saucepot and heat over medium heat until the sugar has dissolved.
  • Remove the simple syrup mixture from the heat and let it cool to room temperature. You can put it into the refrigerator to speed up the cooling process.
  • While the simple syrup is cooling, puree the strawberries and 1 cup cold water in a blender until the berries are fully pureed.
  • Stain the strawberry mixture through a fine mesh strainer to remove any seeds; discard the seeds.
  • In a pitcher, combine the lemon juice, pureed strawberries, remaining 3 cups cold water and the simple syrup.
  • Stir and chill until ready to serve.
  • Serve over ice and garnish with additional fresh strawberries and fresh mint, if desired.
