Cheddar Kale Dip

Two cheeses, fresh kale and a few seasonings come together to make Cheddar Kale Dip, a delicious, hot cheese dip that's ready in minutes.

Ingredients

  • 1 pkg. (8 ounces) cream cheese , at room temperature
  • 1 cup sour cream
  • 2 cups chopped fresh kale , about 2 ounces
  • 1 cup shredded sharp cheddar cheese , divided
  • 1/4 cup dried minced onion
  • 1 Tbs. beef bouillon granules
  • 1 clove garlic , minced
  • 1 Tbs. chopped fresh chives

Instructions

  • Preheat oven to 350F.
  • Combine cream cheese, sour cream, kale, 1/2 cup cheddar, dried minced onion, beef bouillon granules and garlic until blended.
  • Transfer the cheese mixture to a 3-cup baking dish and top with remaining 1/2 cup cheddar.
  • Bake 25 minutes or until heated through.
  • Top with chives and serve with your favorite dippers!

Notes

Makes about 3 cups.

  • You can put the ingredients together ahead of time and refrigerate, covered. Then, when you’re ready to serve the dip, uncover, and let it come to room temperature for about 20 minutes and then bake according to the recipe directions.
  • Serve this dip with crackers, bread or your favorite vegetable dippers
Substitutions
  • You can substitute spinach for the kale
  • You can substitute sliced scallions for the chopped chives
  • Shredded mozzarella can be used in place of the cheddar cheese for a milder flavor
  • You can substitute plain Greek yogurt for the sour cream
