Corn Mango Salsa Recipe 

Fresh vegetables and tropical fruit come together with cilantro, lime and seasonings, in this easy Corn Mango Salsa Recipe. Delicious when served with tortilla chips or as a topping for tacos, chicken beef or seafood.

Ingredients

  • 1 mango peeled, pitted and diced, about 1 cup
  • 1 red bell pepper seeded and diced, about 1 cup
  • 1 jalapeño seeded and minced, about 2 Tablespoons
  • ½ cup fresh corn kernels
  • 2 Tablespoons chopped cilantro
  • 1 Tablespoon minced garlic
  • 1 Tablespoon fresh lime juice
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt

Instructions

  • In a mixing bowl, combine mango, bell pepper, jalapeno, corn, cilantro, garlic, lime juice, vinegar, olive oil, chili powder, cumin and kosher salt.
  • Serve immediately or store in the refrigerator until ready to serve.

Notes

This recipe makes about 2 1/2 cups salsa.
Recipe makes enough for 10 servings (1/4 cup per serving)
