- 1 mango peeled, pitted and diced, about 1 cup
- 1 red bell pepper seeded and diced, about 1 cup
- 1 jalapeño seeded and minced, about 2 Tablespoons
- ½ cup fresh corn kernels
- 2 Tablespoons chopped cilantro
- 1 Tablespoon minced garlic
- 1 Tablespoon fresh lime juice
- 1 Tablespoon apple cider vinegar
- 2 teaspoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon kosher salt
In a mixing bowl, combine mango, bell pepper, jalapeno, corn, cilantro, garlic, lime juice, vinegar, olive oil, chili powder, cumin and kosher salt.
Serve immediately or store in the refrigerator until ready to serve.
This recipe makes about 2 1/2 cups salsa.
