Mini Taco Turkey Meatloaf

Ground turkey combines with taco seasoning, pepper jack cheese, salsa and scallions, for Taco Meatloaf! Make four mini meatloaves or one large one!

  • 1 pound ground turkey
  • 1 envelope (1.25 oz.) taco seasoning mix
  • 1 egg
  • 1/2 cup seasoned Panko breadcrumbs
  • 4 slices pepper jack cheese
  • 1/2 cup salsa
  • 2 scallions , sliced


  • Preheat the oven to 400F. Coat a baking sheet with low sides with non-stick cooking spray.
  • In a large mixing bowl combine ground turkey, taco seasoning mix, egg and breadcrumbs. Shape into 4 mini loaves.
  • Arrange the mini meatloaves on the prepared pan and bake for 20 minutes.
  • Top with pepper jack cheese. Bake an additional 5 minutes or until the cheese is melted and the ground turkey is cooked through and meat thermometer reads 165F.
  • Top with salsa and scallions.


Swirls of Flavor Recipe Tips
  • You can add about 1/2 cup of shredded cheese to the meat mixture for a cheesy meatloaf recipe
  • Serve with taco sauce
  • Top with a dollop of sour cream too
  • Use mild salsa or spicy salsa, whichever you prefer
  • Stir some canned green chiles into the meatloaf mixture for even more flavor
  • Add pickled jalapenos or sliced fresh jalapenos as a topping
  • You can make this meatloaf with ground chicken in place of the ground turkey
  • Use cheddar cheese slices in place of the pepper jack cheese slices
