Dumplings

  • In a medium bowl, whisk together 1 cup flour, baking powder, garlic powder, salt and parsley.
  • Slowly add in ½ cup milk and 1 Tablespoon olive oil. Stir with a spoon. Mixture should be slightly sticky.
  • Shape into 8 dumplings, arrange on a flat surface and refrigerate until chilled, about 15 minutes.

Chicken Soup

  • Meanwhile, heat 1 Tablespoon oil in medium saucepot.
  • Add onion, carrots, celery, marjoram, kosher salt and pepper and cook 5-7 minutes or until vegetables are tender crisp.
  • In small bowl combine 1/2 cup milk and 1/4 cup flour until smooth.
  • Stir milk mixture and chicken broth into the pot and bring to a boil. Boil until mixture thickens, about 1 minute.
  • Stir in chicken.
  • Reduce heat to low and top the soup with the chilled dumplings.
  • Simmer until the vegetables are tender and the dumplings are cooked through, turning at least once, about 20 minutes

  • You can make this recipe with any cooked chicken you have on hand.
  • Get out your hefty dutch oven and make this recipe dutch oven chicken and dumplings. It will cook beautifully in a dutch oven on your stove top.
Substitutions
  • Substitute 1/4 teaspoon salt for the 1/2 teaspoon kosher salt
  • Substitute chopped chives for the chopped parsley
  • Substitute melted butter for the olive oil
  • You can use self rising flour in place of the all purpose flour to make the dumplings. Just omit the baking powder.
  • Replace the dried marjoram with dried Italian seasoning
  • Replace the dried marjoram with dried basil
Storage
  • If you have leftovers, store the dumplings separate from the chicken mixture. Otherwise the dumplings will absorb some of the liquid from the chicken mixture.
  • Leftovers will be good in the refrigerator for 2-3 days.
