Baked Lemon Pepper Chicken With Roasted Garlic

A roasting chicken, seasoned with flavored butter and lemon slices, is surrounded by heads of garlic and lemon wedges. Baked Lemon Pepper Chicken is an easy dinner recipe.

  • Preheat oven to 350F. For easy cleanup, line roasting pan with foil leaving 2-inch overhang. Place chicken in prepared pan.
  • In small microwave-safe bowl microwave butter until melted. Stir in olive oil, lemon pepper seasoning and kosher salt.
  • Thinly slice one lemon crosswise into rounds.
  • Dip lemon slices in melted butter mixture to coat. Arrange in single layer under skin of chicken.
  • Cut remaining lemons each into 4 wedges. Arrange lemon wedges and garlic heads around chicken in roasting pan.
  • Brush remaining melted butter mixture over chicken, lemons and garlic.
  • Roast until meat thermometer inserted in thickest part of chicken registers 180F, about 20 minutes per pound.
  • Let stand 10 minutes before carving.

  • Once the garlic is roasted, squeeze it out, mash the cloves and serve this sweet and creamy garlic along with your chicken.
  • Add orange slices too!
  • Add sliced carrots and onions on the bottom of the roasting pan and top with the chicken
  • Add small red potatoes and chopped onions
Substitutions
  • You can make this recipe with a cut-up chicken in place of the whole roasting chicken
  • No lemon pepper seasoning? No worries! Just add lemon zest and cracked black pepper to the butter and olive oil
