Ingredients
  • 4 cups fresh corn kernels ,from 4 large corn on the cob
  • 1 cup crumbled cojita cheese
  • 1/3 cup mayonnaise
  • 1 jalapeno ,seeded and minced, about 2 Tbs.
  • 1 scallion ,sliced, ¼ cup
  • 1 Tbs. lime juice
  • 1 Tbs. lime zest
  • 1 tsp. chili powder
  • 1 tsp. smoked paprika
  • 2 Tbs. chopped cilantro
Instructions
  1. Combine all ingredients in serving bowl, stirring until evenly coated.
  2. Garnish with jalapeno slices and cilantro sprigs, if desired.
