Ingredients
  • 1 lb. ground beef
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 3 Tbs. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. kosher salt
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15.25 ounces) corn kernels , drained
  • 1 can (15.5 ounces) kidney beans , drained
  • ½ cup uncooked rice
  • 1 cup water
  • 1 cup shredded cheddar cheese
  • 2 scallions , chopped
  • Corn chips , for garnish
Instructions
  1. In large skillet with deep sides, cook ground beef, onion, green pepper, chili powder, cumin and kosher salt until beef is browned.
  2. Stir in tomato sauce, diced tomatoes, corn, beans, uncooked rice and water and bring to a boil.
  3. Reduce heat and simmer, uncovered, 25 minutes or until rice is tender, stirring occasionally.
  4. Top with shredded cheese, scallions and corn chips, if desired.
