In serving bowl combine romaine, apples, cheddar cheese, tomatoes, cranberries and red onion. Top with cooked chicken.
In small bowl whisk together oil, vinegar, maple syrup, Dijon, kosher salt and pepper until blended. Drizzle some of dressing over salad. Serve with remaining dressing.
