- 2 lbs. boneless beef chuck ,cut in 1-inch pieces
- 1/3 cup flour
- 1 ½ tsp. kosher salt
- 1 tsp. dried thyme
- ½ tsp. pepper
- 3 Tbs. oil ,divided
- 2 onions ,chopped, 2 cups
- 1 lb. carrots ,peeled and cut in 1-inch pieces, about 3 cups
- 1 lb. small golden potatoes ,halved, about 3 cups
- 2 large cloves garlic ,minced
- 1 bottle (12 ounces) Guinness stout beer or beef broth
- ¼ cup tomato paste
- 2 cups beef broth
- ¼ cup chopped parsley
Combine flour, kosher salt, thyme and pepper in a bowl. Add beef and toss until evenly coated.
In large pot heat 2 Tablespoons oil over medium-high heat. Cook beef, in batches, until browned; set aside.
To same pot add remaining 1 Tablespoon oil, onions, carrots, potatoes and garlic and cook until just tender-crisp, about 6 minutes, stirring occasionally.
Add beer and tomato paste and bring to a boil, scraping up the brown bits from bottom of pot.
Return beef to pot and stir in beef broth.
Bring to a boil. Reduce heat to medium-low and simmer, covered, until beef is very tender, about 2 hours, stirring occasionally.
Sprinkle with parsley and serve.
Makes about 10 cups/ 8 servings.
