- 1 Tbs. butter
- 1/3 cup minced shallots ,about 2 large shallots
- 1 tsp. kosher salt
- 1/4 tsp. pepper
- 3 cups heavy cream
- 1 Tbs. flour
- 2 lbs. Yukon Gold potatoes ,peeled and thinly sliced, 6 cups
- 2 cups shredded yellow cheddar cheese ,8 ounces
Preheat oven to 350F. Coat a 2 1/2 - 3-quart baking dish with non-stick cooking spray.
In large saucepot melt butter over medium-high heat. Add shallots, kosher salt and pepper and cook until just tender, about 2 minutes.
Combine heavy cream and flour, stirring until blended.
Add heavy cream mixture and sliced potatoes to saucepot and bring to a boil, stirring gently.
Using a slotted spoon, transfer half of the potatoes to the prepared baking dish. Top with 1 cup shredded cheese.
Using slotted spoon, arrange remaining potatoes over cheese. Pour remaining cream mixture over potatoes and top with remaining 1 cup shredded cheese.
Bake 50-60 minutes or until hot and bubbly and cheese is golden.
Let stand 10-15 minutes before serving.

- Prepare the potatoes and transfer to your baking dish.
- Cool, then cover tightly with plastic wrap directly on the surface of the potatoes (to prevent discoloring).
- Let potatoes come to room temperature before baking in the oven.
- Once at room temperature, remove the plastic wrap, top with shredded cheese and bake as directed.
