Ingredients

  • 1 Tbs. butter
  • 1/3 cup minced shallots ,about 2 large shallots
  • 1 tsp. kosher salt
  • 1/4 tsp. pepper
  • 3 cups heavy cream
  • 1 Tbs. flour
  • 2 lbs. Yukon Gold potatoes ,peeled and thinly sliced, 6 cups
  • 2 cups shredded yellow cheddar cheese ,8 ounces

Instructions

  • Preheat oven to 350F. Coat a 2 1/2 - 3-quart baking dish with non-stick cooking spray.
  • In large saucepot melt butter over medium-high heat. Add shallots, kosher salt and pepper and cook until just tender, about 2 minutes.
  • Combine heavy cream and flour, stirring until blended.
  • Add heavy cream mixture and sliced potatoes to saucepot and bring to a boil, stirring gently.
  • Using a slotted spoon, transfer half of the potatoes to the prepared baking dish. Top with 1 cup shredded cheese.
  • Using slotted spoon, arrange remaining potatoes over cheese. Pour remaining cream mixture over potatoes and top with remaining 1 cup shredded cheese.
  • Bake 50-60 minutes or until hot and bubbly and cheese is golden.
  • Let stand 10-15 minutes before serving.

Notes

Make Ahead Directions:
  1. Prepare the potatoes and transfer to your baking dish.
  2. Cool, then cover tightly with plastic wrap directly on the surface of the potatoes (to prevent discoloring).
  3. Let potatoes come to room temperature before baking in the oven.
  4. Once at room temperature, remove the plastic wrap, top with shredded cheese and bake as directed.

  • Make this recipe with Gouda or Jarlsberg cheese
  • Sprinkle with chopped parsley before serving
  • Delicious with dried sage or fresh sage. Just add it when cooking the shallots
  • White or yellow onions will lend a stronger onion flavor to the casserole
  • You can make this potato side dish with sweet potatoes
  • A combination of Yukon gold potatoes and sweet potatoes makes a colorful casserole
  • White cheddar cheese can be substituted for yellow cheddar cheese
