Ingredients
  • 1 head (about 1 1/2 lbs.) cauliflower ,trimmed and cut into small florettes, 6 cups
  • 2 Tbs olive oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. kosher salt
  • 1/4 tsp. pepper
  • 2 cups shredded low fat cheddar cheese ,divided
  • 1 cup low fat sour cream
  • 4 ounces reduced fat cream cheese ,at room temperature
  • 4 slices crisp-cooked turkey bacon ,chopped
  • 4 scallions ,sliced on diagonal
Instructions
  1. Preheat oven to 425F. Spray a 2-quart casserole dish with non-stick cooking spray.
  2. Toss cauliflower, oil, garlic powder, kosher salt and pepper until evenly coated and bake, covered, 30 minutes until tender-crisp.
  3. Meanwhile, in small bowl combine 1 1/2 cups shredded cheddar cheese, sour cream and cream cheese until blended.
  4. Reduce oven temperature to 375F.
  5. Remove casserole dish from oven and carefully uncover. Stir in cheese mixture until cauliflower is evenly coated. Top with remaining 1/2 cup shredded cheddar cheese.
  6. Bake, uncovered, additional 25 minutes or until tender, hot and bubbly.
  7. Top with bacon and scallions.
Recipe Notes

Makes 6 servings.
*Make it mashed! Prepare recipe up until Step 5, cooking 45 minutes or until cauliflower is tender. After removing casserole dish from the oven, mash the cauliflower using a potato masher. Then stir in cheese mixture and top with remaining 1/2 cup cheese. Return to oven as instructed in Step 6.
