  1. Preheat oven to 425F.
  2. Pierce potatoes several times with a fork.
  3. Arrange sweet potatoes on a baking sheet and roast 1 hour or until tender. Let cool 15 minutes, then remove skins and discard.
  4. Mash potatoes and stir in coconut milk, chili powder, turmeric, kosher salt and pepper.

  5. Top with sliced scallions.
